Peanut Butter Macaroons

� 1/4 cup Peanut Butter
� 2 egg whites
� 1/2 teaspoon vanilla
� Dash salt
� 2/3 cup sugar
� 3 1/2-ounce can (1 1/3 cups) flaked coconut
Recipe
� Preheat oven to 325�F.
� In saucepan, melt Jif over very low heat; cool slightly.
� Beat egg whites, vanilla, and salt till soft peaks form. Gradually add sugar, beating till stiff peaks form.
� Fold in coconut and melted peanut butter.
� Drop by rounded teaspoonfuls onto greased cookie sheet.
� Bake in 325�F oven for 20 minutes.
� Let stand 1 minute; remove to rack. Cool.
� Makes 2 1/2 dozen
