    2 tablespoons olive oil
    8 boneless, skinless chicken breasts, cut into cubes
    2 onions, chopped
    2-1/2 cups chicken stock
    1 teaspoon dried oregano
    1 teaspoon dried cilantro
    1/4 teaspoon cayenne pepper
    2 teaspoons ground cumin
    1 can diced chiles
    1 jalape�o pepper, diced with seeds and stem removed
    2 cans cannellini beans, rinsed and drained
    5 green onions, chopped
    1/4 pound shredded Monterey Jack cheese
    Sour cream

    Recipe



    1. Heat olive oil in a large pot over medium heat.

    2. Add chicken and onions to pot and saut� for 8 minutes. (Note: Cook until chicken is tender.)

    3. Mix in chicken stock, oregano, cilantro, cayenne pepper, cumin, chiles, and jalape�o pepper. Reduce heat. Simmer for 15 to 20 minutes.

    4. Add cannellini beans. Simmer for 10 minutes. Garnish with green onions, shredded cheese, and sour cream. Serve with cornbread.
