1 egg, slightly beaten
� 3/4 cup soft bread crumbs
� 1/3 cup finely chopped onion
� 2 tablespoons plain yogurt
� 1/2 teaspoon salt
� 1/2 teaspoon ground cinnamon or ground cardamom
� 1/2 teaspoon ground coriander or mace
� 1/4 teaspoon cayenne pepper
� 1 pound ground beef, lamb or pork
� 1/4 cup jalapeno or hot pepper jelly
� 4 lettuce leaves
� 2 large pita bread rounds, halved crosswise
� Thinly sliced cucumber (optional)
� Plain yogurt (optional)
Recipe
1. Preheat broiler. In a large bowl, combine egg and bread crumbs. Stir in onion, the 2 tablespoons yogurt, salt, cinnamon, coriander and cayenne pepper. Add ground meat; mix well. Shape mixture into 4 oval patties, each about 5 inches long and 1/2 inch thick.
2. Place patties on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 11 to 13 minutes or till done (160 degree F), turning meat after half of the boiling time, then brushing once with 2 tablespoons of the jalapeno jelly. Spoon remaining jelly over patties before serving. Serve burgers in lettuce-lined pita halves with cucumber slices and additional yogurt, if you like. Makes 4 servings.
