    Stuffed Chicken Breasts

    4 chicken breast halves
    1/2 lb. spinach, cooked & drained
    1/4 cup parmesan cheese, grated
    1/2 cup cheddar cheese, grated
    1/4 cup bacon, cooked & chopped
    pepper
    1 Tbsp. salt
    1/2 cup olive oil chicken stock
    1/4 cup heavy cream
    1 Tbsp. parsley, chopped

    Make a pocket in each chicken breast. Combine spinach, cheeses, bacon, salt, and pepper. Stuff mixture into chicken breast. Heat olive oil in pan. Saut� chicken on one side. Turn chicken over and continue cooking through in a 350� F oven, until the internal temperature of the chicken AND the stuffing reaches 170� F. Remove pan from oven and chicken from pan. Deglaze with chicken stock and let simmer for a few minutes. Add heavy cream and heat through. Season to taste and garnish with fresh parsley.
