Pittsburgh Potatoes

4 cups diced uncooked potatoes
� cup chopped celery
1 small jar pimento, drained
� lb Cheddar cheese
1 tsp. Salt
1 small chopped onion
� cup cracker crumbs
2 cups white sauce
Recipe
Place potatoes in pan, add onion, celery and salt. Cover with boiling water and cook 5 minutes. Drain and add pimento. Place in greased baking dish. Pour white sauce over potatoes. Sprinkle with crumbs. Dot with butter and bake at 350� until browned, about 20 to 25 minutes. Serves 6 to 8.
White Sauce:
In saucepan, melt 4 tbsp butter. Add 4 tbsp. flour and mix well. Gradually add 1-1/2 cups milk, tsp. salt, pepper and lastly the grated cheese to bend
