Serves 4.
List of Ingredients
1/2 cup butter
1 cup clam broth
1/2 cup dry white wine
1 head cauliflower, steamed and cut into very small pieces
1 tablespoon garlic
1 teaspoon salt
1/4 teaspoon black pepper
3 shallots, minced
1 1/2 cups clams, canned with juice
3 cups heavy cream
4 slices of bacon, cut into small pieces Recipe
In a non stick 3 1/2 quart soup pot, melt the butter. Add the bacon and saut� until it begins to crisp. Add cauliflower, shallots, and spices. Stir. Add the clam broth and white wine and bring to a gentle boil. After 2 minutes reduce heat. Leave soup on medium high heat. Add clams. Reduce heat to low. Simmer for 5 minutes minutes.
In a small bowl pour the cream. Slowly whisk in a ladle of the broth from the soup pot. Do not add it all at once or it will break the cream. Then slowly drizzle the cream/broth mixture in the the main pot. Stir regularly to prevent sticking. Heat for 1 minute. Serve immediately.
