    CAJUN CAKE

    List of Ingredients





    CAJUN CAKE

    2 cups plain flour
    1-1/2 cups sugar
    1 teaspoon baking soda
    2 eggs
    1 teaspoon salt
    3 tablespoons margarine, softened
    1 large can crushed pineapple
    Icing for Cajun Cake (below)
    Icing:
    2 cups sugar
    1-1/2 sticks margarine
    1 large can evaporated milk
    2 cups pecans, chopped
    2 cups coconut

    Recipe




    Directions:
    Sift dry ingredients in bowl. Add eggs, pineapple and margarine. Bake at 300 degrees in 10x13-inch greased glass pan for 40 minutes. Icing: Combine in saucepan and boil over medium heat, stirring constantly, for 5 minutes: sugar, margarine and milk. Stir in pecans and coconut. Using a fork, make holes in baked cake. Pour hot icing over cake.
