4 chicken breasts, skin and bone removed
1 cup sifted flour or as needed
1/8 teaspoon nutmeg or to taste
salt and ground black or white pepper to taste
2 egg whites, at room temperature
...and beaten with 1 Tablespoon water
1 cup finely ground nut of choice (pecans, walnuts, macadamia, pistachio
... or cashews), more as desired
4 Tablespoons butter, melted (see note below)
minced parsley as desired for garnish (optional)
Heat grill to low/medium or oven to 350 degrees F.
On a sheet of wax paper, combine flour, nutmeg, and salt and pepper, mixing well.
Dredge chicken pieces in flour mixture, coating each lightly.
Dip each flour coated piece in egg white mixture and then coat in nuts of choice.
Place each nut coated chicken piece on a large square of heavy duty aluminum foil.
Evenly drizzle butter over top.
Close foil on each, forming each into a packet and sealing tightly.
to grill:
Place chicken packets, seam side up, on a grill rack, (about 10 inches above medium coals,
ash gray and glowing) or on gas grill.
Grill chicken pieces in foil packets, turning (over) frequently, until chicken is fork tender
and done, about 40 to 45 minutes total grilling time.
Be careful not to burn chicken.
to bake:
Place foil packets on a ungreased baking sheet and bake for 40 to 45 minutes or until
chicken pieces are fork tender.
May wish to open the top of foil packages for the last 10 minutes of grilling/baking to
crisp the nut coating.
Garnish each serving with minced parsley or as desired.
Makes 4 servings.
Note:
May liberally coat with butter flavored cooking spray intead of butter, if desired.
