    2 - 3 tsp. Dijon style mustard
    1 1/2 - 1 3/4 lbs. cubed beef steaks,
    ...(4 - 6), pounded to 1/4" thickness
    1, 10oz. pkg. frozen chopped spinach, thawed + squeezed dry
    1, 2.8oz. can French fried onions
    3/4 c. shredded Monterey Jack cheese, (3oz.)
    1/2 tsp. salt
    1 tbsp. Olive oil
    1/2 tsp. garlic powder
    1/2 tsp. ground paprika
    1/2 tsp. ground black pepper

    Preheat the oven to 375. Coat a 9x13x2 inch baking dish with cooking spray.
    Spread 1/2 teaspoon mustard over each steak.
    Use a medium bowl to combine the spinach, onions, cheese, and salt.
    Spread the spinach mixture evenly over the tops of the steaks.
    Roll each steak up, starting from the short end, tucking in the sides while rolling.
    Use a small bowl to combine the olive oil, garlic powder, paprika, and pepper and mix well.
    Brush the oil mixture over the steak rolls.
    Place the steak rolls in the baking dish, and bake for 45 - 50 minutes, or until no pink remains in the steak and the filling is hot.
    Cut into 1/2" thick slices, and serve.
    Makes 4 - 6 servings.

    *Note: Spoon warm spaghetti sauce or au jus gravy over the steak rolls for a flavorful sauce.
