cubes - Beef Curry
1 Tablespoon vegetable oil
1 finely chopped onion
1 - 2 cloves minced garlic
1 Tablespoons vinegar or lemon juice
2 teaspoons curry powder
1 pound beef roast, cut in 1 cubes
1/2 cup tomato sauce or juice
1/2 teaspoon salt
1/2 - 1 cup beef broth
Heat oil in heavy skillet or kettle.
Saute onions and garlic.
In small bowl, blend vinegar and curry powder.
Stir vinegar mixture into onion mixture and fry lightly, for 1 - 2 minutes.
Add beef and stir fry briefly to coat meat with spices.
Add tomato sauce, salt and broth.
Bring to a boil, reduce heat and cover.
Simmer about 2 - 3 hours. Add more liquid if needed.
Serve over hot rice or noodles.
Serves 3 - 4.
