    ground - Beef + Bacon RollUps

    12 slices bacon
    1 medium finely chopped onion
    2 minced garlic cloves
    1/8 c. milk
    1/2 c. ketchup
    3/4 c. seasoned bread crumbs
    1 chopped green bell pepper
    3/4 tsp. dried parsley
    1/4 tsp. salt
    1/8 tsp. ground black pepper
    1 lb. ground beef

    Cook the bacon until limp, not crisp, so it does not break when rolled.
    Drain and reserve 2 tbsp. of the drippings. Set the bacon aside.
    Cook the onion and garlic in the reserved drippings until tender but not
    brown. Set aside.
    Use a medium bowl to blend combine the milk and ketchup.
    Stir in the bread crumbs, green pepper, parsley, salt, pepper and the onion
    mixture.
    Add the meat; mix well, and divide into 4 parts. Set aside.
    Preheat oven to 350. Need a 12x7x2" baking dish.
    Lay down a sheet of waxed paper, a little bit larger than the length of the
    bacon strips.
    Place 2 slices of the bacon, side by side, on the waxed paper.
    Take another slice of bacon and cut it half crosswise.
    Place the 2 half pieces of the bacon and lay over the one end of the 2 bacon
    slices, making a "small t" shape.
    Place 1/4 of the meat mixture evenly over the bacon.
    Start rolling up from the long side.
    The meat may be a bit sloppy, but just try keeping it as together as you can
    while you roll.
    When you get to the other pieces of bacon, tuck the ends of the bacon over
    on top of the already rolled section and continue to roll up.
    Place the roll ups in the baking dish with the seam side down.
    Repeat with rest of the bacon and meat.
    Bake about 45 minutes, or until meat is no longer pink in the middle.
    Makes 4 servings.
