    ground/stuffed - Stuffed Flank Steak Roll

    9 strips of bacon
    1 pound 8 ounces ground beef
    1 1/2 teaspoons salt
    1 1/2 teaspoons lemon pepper
    1/3 cup + 2 teaspoons grated Parmesan cheese
    3 ounces canned sliced mushrooms, drained
    1/4 cup + 1 1/2 teaspoons chopped green olives
    3 tablespoons chopped onions

    Partially cook bacon. Drain on paper towels.
    On wax paper, form the ground beef into a 12x7x1/4 inch rectangle.
    Sprinkle lightly with salt and lemon pepper.
    Top with parmesan cheese.
    Combine mushrooms with olives and onion.
    Spread evenly over the meat.
    Roll up like a jelly roll and cut into 1 1/2 inch thick slices.
    Wrap the edge with a strip of bacon and secure with toothpicks.
    Grill 8 minutes, turn and cook 8 more minutes. Serve hot.
