The browning of the roast enhances it's flavors, but you can skip that step if you wish.
roast - Beef w/Red Wine
1, 3 pound beef roast
3 ounces of salt pork, blanched and diced
...(or bacon fat)
salt and pepper
1 cup dry red wine
1 large quartered and sliced onion
1 bay leaf
1 small minced garlic clove
flour
Brown the meat on all sides with the salt pork in a heavy
stock pot or a Dutch oven type pot.
Sprinkle with salt and pepper.
Add the remaining ingredients.
Cover and simmer for 3 - 4 hours, or until the meat is tender.
Remove the meat and keep warm.
Remove the bay leaf and discard.
Thicken the juices with a paste made from equal amounts of
flour and water, being careful of lumps.
Taste and adjust seasoning.
Makes 4 servings.
