    roast - Peppered Roast Beef

    2 1/4 pound eye round beef roast
    2 teaspoons Olive oil
    2 tablespoons Dijon mustard
    2 minced garlic cloves
    1 teaspoon dried oregano
    1 tablespoon freshly cracked black peppercorns
    2 teaspoons coarse salt, (pickling salt)

    Preheat oven to 325 degrees.
    Combine the Olive oil, mustard, garlic and oregano together
    and rub all over the roast.
    Mix the cracked pepper and salt together and sprinkle all
    over the roast.
    Place the roast on a rack in a shallow roasting pan.
    Bake for about 1 hour, until meat is medium rare and registers
    140 degrees on a meat thermometer.
    Let the roast stand for 20 minutes before slicing.
    Serve with gravy.
    Makes 8, two slice servings.
