    steak - Shortcut Swiss Steak

    1 pound boneless beef top round steak,
    ...3/4 inch thick, cut into very thin strips
    3 tbsp. cornstarch
    1 14 1/2oz. can low salt beef broth
    1/2 tsp. sugar or sugar substitute
    1/2 tsp. garlic powder
    1 15oz. can diced tomatoes
    1 medium onion, cut into wedges or slices
    1/2 c. sliced celery stalk, approximately 1 stalk
    4 c. hot cooked medium egg noodles (about 4 cups dry), cooked without salt

    In bowl mix cornstarch and 1 cup of the broth until smooth. Set aside.
    In a medium nonstick frying pan, over a medium/high heat, cook beef in
    2 batches until browned, stirring often. Set aside.
    In another pan, add remaining broth, sugar, garlic powder, tomatoes, onion
    and celery and bring to a boil.
    Cover and cook 5 minutes or until vegetables are tender crisp.
    Stir cornstarch mixture and add.
    Cook until mixture boils and thickens, stirring constantly.
    Return beef to pan and heat through.
    Serve over noodles.
    Makes 4 servings

    Note: To make slicing easier, freeze beef 1 hour.
