    List of Ingredients

    scratch - 1234 Cake with Lemon Icing

    for the cake:
    1 c. butter
    2 c. sugar
    3 c. flour
    4 eggs
    2 level tsps. baking powder
    1 c. milk
    pinch of salt
    1 tsp. vanilla

    for the icing:
    2 beaten eggs
    2 c. sugar
    grated rind and juice of 2 lemons
    4 tbsp. + 3 tbsp. butter, separated

    for the cake:
    Preheat oven to 350. Grease and flour two 9" round cake pans.
    Sift the flour, salt and baking powder together and set aside.
    Cream the butter and sugar together.
    Add the eggs and vanilla and beat again.
    Add the flour mixture, alternately with the milk, to the butter mixture, blending well after each addition.
    Pour into pans and bake for 20 - 25 minutes or until tester comes out clean. Let cool.

    for the icing:
    Place the eggs, the lemon rind/juice and half the butter in the top of a double boiler.
    Cook slowly for about 30 minutes, stirring frequently.
    Add the remaining butter and beat well.
    Spread 1/2 of the icing on the "top only" of the bottom layer of cake.
    Stack the other layer on top and spread the "top only" of that layer also. The sides are not iced.
