    List of Ingredients

    scratch - Carrot Cake

    4 eggs
    2 cups white granulated sugar
    1 1/2 cup oil
    2 cups flour
    1 teaspoon salt
    2 teaspoon ground cinnamon
    2 level teaspoons baking powder
    2 level teaspoons baking soda
    3 cups freshly grated carrots
    1 cup chopped nuts, optional

    Preheat oven to 350 degrees F. Greast and flour a tube pan.
    Stir together the flour, salt, cinnamon, baking powder, baking soda. Set aside.
    Beat together the eggs, sugar and oil.
    Now stir the dry ingredients into the wet ingredients.
    Add the carrots and nuts and stir together.
    Pour into pan and bake for 1 hour, or until a tester comes out clean.
    May be frosted with a cream cheese or white frosting, or just sprinkle the top
    and sides with a little sifted, powdered confetioners sugar.
