    scratch - Coffee Cake w/Fruit

    1/2 cup margarine, softened
    1/2 cup sugar
    1 egg
    1 cup flour
    1/4 teaspoon baking powder

    Cream margarine and sugar together; add egg.
    Mix flour and baking powder together.
    Combine with creamed mixture.
    Spread into large pie pan or 9 inch square cake pan.
    Shape with a slight edge/lip around the outside edge.
    Top with sliced fresh peaches, apples, Italian prune plums,
    nectarines, or even apricots.
    Sprinkle liberally with sugar and cinnamon as desired.
    Bake at 350 degrees F. for 35 minutes.
    Let set for a few minutes before serving. Good cold, too.

    Note:
    Use sugar according to how sweet the fruit is. I found the
    apricots a bit sour. No need to peel nectarines.
