    List of Ingredients

    scratch - Pina Colada Pound Cake #1, adult

    for the cake:
    1 cup softened butter or margarine
    2 cups sugar
    5 eggs
    2 1/3 cups flour
    1 1/2 teaspoons baking powder
    3/4 cup 1/2 + 1/2
    1/4 cup coconut rum
    1, 8 ounce cand crushed pineapple, drain, save liquid
    1 cup shredded flaked coconut

    for the glaze:
    1/4 cup pineapple juice
    1 cup sugar
    1/8 cup Water
    1/8 cup coconut rum

    for the cake:
    Preheat oven to 350 degrees F.
    Grease and flour a bundt cake pan.
    Cream together the butter and sugar.
    Add the eggs one at a time, then beat for 4 minutes.
    Stir together the flour and baking powder. Set aside.
    Stir together the half + half, coconut rum and the saved
    liquid from the pineapple. Set aside.
    Alternately beat in the dry mixture and the wet mixture.
    Mix well. Then stir in the pineapple and coconut.
    Pour into the bundt pan and bake for 40 - 50 minutes, or
    until a tester comes out clean.

    for the glaze:
    Place the sugar, pineapple juice and water in a small
    saucepan and boil for 2 minutes.
    Add the coconut rum and pour over the warm cake.
