    Note listed with recipe: This is also called Moravian Sugar Cake, Moravian is a Protestant denomination from Old Salem, North Carolina, who settled there in the early 1800's.

    List of Ingredients

    scratch - Potato Sugar Cake

    1 medium cooked potato
    1/2 cup warm water
    2/3 cup melted butter, separated
    1/2 teaspoon salt
    1 package/packet yeast
    1 slightly beaten egg
    1/3 cup sugar
    2 - 2 1/2 cups flour
    1/2 cup brown sugar
    1 teaspoon ground cinnamon
    softened butter

    Mash potato and measure 1/2 c. Set aside. Dissolve yeast
    in warm water; let stand 5 minutes. Combine potato, egg,
    1/3 c butter, sugar, and salt, mixing well. Add yeast mixture
    and 1 c flour, mixing well. Gradually stir in remaining flour to
    make a soft dough. Turn dough out onto a floured surface
    and knead until smooth, about 2 - 3 minutes. Place in a
    well-greased bowl, turning to grease the top. Cover and let
    rise in a warm place, until doubled in size. (about 1 1/2 hours)
    Punch dough down and divide in half, press each half into 2
    well greased 8 inch square pans. Brush will softened butter.
    Cover and let rise in a warm place about
    45 minutes or until double in size.
    Punch holes, about 2 inches apart, 3/4 through the dough
    with the handle of a wooden spoon. Combine brown sugar
    and cinnamon; sift evenly over dough. Drizzle with 1/3 c butter.
    Bake at 400* F for about 20 minutes.
    Cut into squares and serve warm.
    Makes 2.
