    scratch - Raspberry Ripple Cake + Icing*

    Recipe Introduction

    I think, my mother got this from either a weekly paper we got or the local daily, I am not sure which one.

    List of Ingredients

    scratch - Raspberry Ripple Cake + Icing*

    for the cake:
    1/2 c. butter
    1 c. sugar
    1 egg
    1 tsp. vanilla
    2 c. flour
    2 tsp. baking powder
    1/2 tsp. salt
    3/4 c. milk
    6 tbsp. raspberry JAM
    1/8 or 1/4 tsp. red food coloring

    for the icing:
    1 c. sifted confectioners sugar
    3 tbsp. cream
    1/4 tsp. vanilla
    1/3 c. raspberry JAM
    2 tsp. water

    Preheat oven to 350. Grease and flour tube pan.
    for the cake:
    In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla and beat until well blended.
    Sift together flour, baking powder and salt. Add to creamed mixture alternately with milk....beginning and ending with dry ingredients. Remove 1 cup of batter from bowl and mix with food coloring and jam.
    Pour 1/2 plain batter into tube pan. Then all the jam batter and finish with plain batter. (you are making 3 layers).
    Bake for 50 minutes. Cool 10 minutes before removing from the pan.

    for the icing:
    In a small bowl, combine sugar, cream and vanilla and beat until smooth. Drizzle over top of cooled cake.
    In a small saucepan, combine jam and water. Heat until thinned. Cool slightly, then drizzle over top of the other glaze.
