    scratch - Sponge Shortcake

    6 eggs, yolks and whites separated
    1 cup sifted powdered confectioners sugar
    1/2 teaspoon vanilla
    1 cup flour
    1/2 level teaspoon baking powder
    1/4 teaspoon salt

    Preheat oven to 350. Grease and lightly flour a tube or two 8 inch round cake pan(s).
    Sift flour, baking powder and salt together. Set aside.
    Gradually beat confectioners sugar into egg yolks until light in color.
    Add vanilla and combine together. Set aside.
    Beat egg whites until stiff and fold LIGHTLY into the sugar mixture.
    Gradually fold flour mixture into the sugar mixture.
    When blended, turn batter into cake pan(s).
    Bake until cake springs back when lightly touched.(Start testing at approximately 30 minutes.)
    Sprinkle with confectioners sugar and serve.
