    scratch - Strawberry Crunch Cake

    2 c. + 1/3 c. flour, separated
    2 tbsp. + 2 tbsp. wheat flour, separated
    4 tsp. baking powder
    1/2 c. + 1/2 c. + 1/3 c. sugar, separated
    3/4 tsp. salt
    3/4 c. milk
    2 eggs
    1/2 tsp. lemon extract
    1 tsp. vanilla
    2 c. freshly sliced strawberries
    1/3 c. softened butter
    1/4 tsp. nutmeg
    frozen whipped topping, thawed or whipped cream

    Preheat oven to 425. Grease a 10" spring form pan.
    Combine the 2 c. flour, the 2 tbsp. wheat flour, baking powder, a 1/2 c. of the sugar, salt, milk, eggs, lemon extract and vanilla together and mix well. It should be quite thick.
    Spread into the spring form pan.
    Sprinkle the sliced strawberries and then the other 1/2 c. of sugar over top of the batter.
    Use a small bowl to mix the 1/3 c. of sugar, the 1/3 c. white flour, the other 2 tbsp. wheat flour, butter, and nutmeg together until crumbly. Sprinkle over top of the strawberries.
    Bake for 30 - 40 minutes.
    Serve warm with whipped topping or whipped cream
    Makes 12 servings.
