    scratch - Bean Cake w/cream cheese frosting

    for cake:
    1 cup butter
    1 cup packed brown sugar
    1/2 cup granulated white sugar
    4 eggs, separated
    2 cups cooked, mashed pinto beans
    2 cups all-purpose flour
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1 1/2 teaspoons baking powder
    1 cup powdered cocoa
    1/8 teaspoon ground cloves
    1 teaspoon ground cinnamon
    1/2 teaspoon vanilla
    1 cup chopped black walnuts, or pecans

    for cream cheese frosting:
    1, 3 ounce square package cream cheese
    1 teaspoon vanilla
    2 1/2 cups powdered confectioners sugar
    1 Tablespoon butter


    for cake:
    Heat oven to 325 or 350 degrees F, see baking below.
    Grease and flour a 8 x 11 1/2 x 2 inch baking pan, or
    a full sized bread loaf pan.
    Cream butter and sugar together until fluffy.
    Beat in egg yolks and beat in well.
    Add mashed pinto beans, spices, and vanilla.
    Sift flour with cocoa, baking powders, soda, and salt together 3 times.
    Add to creamed mixture with nuts.
    Beat egg whites until stiff but not dry and fold into batter.
    Pour into desired baking pan.
    Bake:
    8 x 11 1/2 x 2 inch - 350 degrees F. for 45 minutes
    brad loaf pan - 325 degrees F. for 1 hour.

    for cream cheese frosting:
    Beat all together; frost cake while warm.
    May also use a caramel frosting.

    Notes:
    This is an unusual cake. It keeps well and moist.
    It is important to mash the beans to a very smooth consistency.
