    scratch - Jam Cake #1, (Ward's)

    3 1/3 cups flour
    1 teaspoon baking powder
    3/4 cup + 2 Tablespoons butter
    1 cup granulated white sugar
    1 egg
    1, 9 ounce jar apricot jam or preserves,
    ...or flavor of your choice
    powdered confetioners sugar, optional

    Preheat oven to 425 degrees F. Lightly grease a
    9 inch square baking pan.
    Blend flour and baking powder in small bowl and set aside.
    Beat butter and sugar with mixer, on low to medium speed
    until creamy. Stir in egg.
    Add flour mixture and blend by hand. Batter should be
    crumbly.
    Pour half of batter in bottom of baking pan. Pat down.
    Spread jam/preserves over the layer of batter.
    Pour remaining batter on top of preserves. Do NOT pat
    down. Bake approximately 20 minutes, until lightly
    browned.
    Sprinkle with powdered sugar to decorate, if desired.
