scratch - Strawberry Cake, (microwave)
1/4 cup shortening
1, 3 ounce package dry strawberry gelatin
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup apple juice
1/4 cup vegetable oil
1 teaspoon vanilla
1 egg
1, 4 ounce container frozen whipped topping, thawed
1 cup freshly sliced strawberries, mash if desired
Place wax paper in the bottom of an 8x1 1/2 inch round
microwave safe dish. (Cut to fit if needed.)
Place a microwave safe plate, upside down, into the microwave.
Blend the shortening and gelatin together in a medium bowl and
set aside.
In another bowl stir together the flour, baking soda and salt.
Add the juice, vanilla and egg to the gelatin mixture, until
blended well. Add the dry ingredients and blend well again.
Pour batter into the dish and set on top of the plate. Microwave,
uncovered, on high for 2 minutes. Turn dish 1/2way around and
microwave for 2 - 4 minutes more, or until a tester comes out clean
and the top is almost dry. Remove cake to a flat, heatproof surface
for 10 minutes. (Do not set on a wire rack). Invert dish onto a
serving plate to remove the cake. Discard wax paper. Let cool for
about 1 hour, or until completely cool. Frost with whipped topping.
Spread sliced strawberries across the top. Cover and refrigerate until
served.
Makes 8 servings.
