    drop - Apple Cookies #2, glazed


    1 1/3 cups packed light brown sugar
    1/2 cup Plus 1 Tablespoon butter softened, divided
    1 egg
    2 cups all purpose flour
    1 teaspoon baking soda
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon salt
    1/4 cup apple juice or apple cider
    1 cup chopped walnuts
    1 cup chopped unpeeled apples
    1 cup raisins (optional)
    for glaze;
    1 1/2 cups sifted powdered confectioners sugar
    2 Tablespoons whole milk
    1/4 teaspoon vanilla

    Heat oven to 375 degrees F. Grease baking sheets.
    In large bowl, beat sugar and 1/2 cup butter with an electric mixer
    until well blended. Beat in egg until fluffy.
    In a medium mixing bowl, combine the flour, baking soda, cinnamon,
    cloves, nutmeg and 1/4 teaspoon salt.
    Add dry ingredients to brown sugar mixture; beat well.
    Beat in apple juice.
    Stir in walnuts, apples and raisins.
    Drop dough from tablespoon onto a baking sheet.
    Bake for 12 to 15 minutes or until done.
    For glaze:
    In a small bowl combine confectioners sugar, milk, the remaining
    1 tablespoon butter, vanilla and remaining dash salt.
    Stir until smooth and spread on warm cookies.
    Makes about 3 dozen/36 cookies.
