    You can also make this dish with ground beef and corn tortillas.

    fresh - Chicken Enchiladas, simplified

    1 to 1 1/2 pounds diced and lightly browned chicken
    salt and pepper to taste
    1/2 tsp onion powder
    1/4 tsp garlic powder
    1/2 tsp chili powder
    dash cayenne pepper
    8 oz can tomato sauce
    10 oz can enchilada sauce, your favorite
    16 oz can refried beans, or make your own
    8 oz grated cheddar cheese, more if you like lots
    6 "Gordita" style tortillas

    Coat non-stick skillet cooking sprayand lightly brown
    chicken. Drain chicken and add seasonings, tomato sauce, and
    1/4 can of enchilada sauce. Stir well. Fill each tortilla with 1/3
    cup refried beans, cheese to your taste (I like lots), and some of the
    seasoned chicken. You can add olives, onions, etc. Place the filled
    and rolled tortillas into a 13"x9" baking dish that has been sprayed
    lightly with "no stick." Cover the enchiladas with the remaining 3/4
    can of enchilada sauce and sprinkle with cheese. Bake in a 350 degree
    oven for 30 minutes. Serve with sour cream, guacamole, and a fresh
    green salad...Yum...
    Serves 4-6 people.
