Chicken Piccata #2
4 boneless chicken breasts
1 egg
3 tbsp lemon juice, separated
1 cup flour
1/8 tsp garlic powder
1/8 tsp paprika
1/4 cup extra light Olive oil
2 cubes chicken bouillon
1/2 cup boiling water
Beat egg with 1 tsp lemon juice. Combine flour, garlic, and paprika. Dip
chicken pieces in egg, then in flour mix. Brown chicken in oil in frying
pan. Dissolve bouillon cubes in boiling water, add remaining lemon juice.
Pour over browned chicken and simmer, covered, for 25 minutes or until
chicken is cooked through and tender. Serves 4.
