    fresh - Chicken + Chili Fried Rice

    List of Ingredients

    fresh - Chicken + Chili Fried Rice

    2 tbsp. cooking oil
    2 boneless, skinless chicken breasts, cut into 1" cubes
    1 or 2 chopped red chilies
    1 clove crushed garlic
    1 smidgen chili powder
    2 tsp. ground ginger
    1 lightly beaten egg
    2 - 3 c. cooked rice
    2 tbsp. soy sauce
    2 tbsp. clam or oyster sauce
    fresh coriander for garnish, optional

    Pour oil into large frying pan and heat.
    Stir fry the chicken until it is completely cooked through.
    Add chilies, garlic and ginger. Stir to release the fragrance for about 10 - 20 seconds.
    Then add the egg. Stir a little more, until you see the egg beginning to scramble.
    Pour rice into the pan and stir well.
    Add the soy and clam sauces. Continue to stir so that the sauces flavor the chicken and rice.
    This is ready when the rice is hot.
