6 boneless chicken breast halves
1 medium onion, sliced
4 ounces sliced mushrooms, optional
1 thinly sliced stalk celery rib
1 tablespoon vegetable oil
1 tablespoon butter
1/4 cup chicken broth
1 teaspoon dried parsley
2 tablespoons fine dry breadcrumbs
1/2 teaspoon poultry seasoning
2 teaspoons grated Parmesan cheese
3/4 cup finely shredded Mozzarella cheese
salt and pepper
1, 10 1/2 ounce can condensed cream of chicken soup
1/2 cup milk
1/2 teaspoon basil
Place chicken pieces between sheets of plastic wax.
Gently pound to flatten evenly, being careful not to
tear/break the plastic.
Saute onion, mushroom, and celery in a large frying pan
with the oil and butter, until tender.
Add broth, parsley, bread crumbs, poultry seasoning and
cheeses.
Stir with a fork to blend well.
Sprinkle breasts with salt and pepper.
Place even amounts of stuffing on top of each breast.
Roll up and place a toothpick in to hold closed.
Place chicken in a shallow 3 quart baking dish.
Spoon any extra filling around rolled chicken.
Mix soup with milk and basil.
Pour over chicken.
Bake at 350 degrees F for 1 hour.
Baste occasionally with sauce from the baking dish.
Remove toothpicks to serve.
Makes 4 to 6 servings.
May be served with rice or potatoes.
