1, 3 to 4 pound fryer, cut into serving pieces
6 potatoes, peeled and quartered
1 small onion, sliced and separated into rings
1 cup crushed tomatoes
2 Tablespoons chopped parsley
1 teaspoon basil
2 garlic cloves, minced
salt and pepper to taste
1/4 cup grated Parmesan cheese
3 Tablespoons vegetable or Olive oil, plus
Wash chicken and wipe dry with paper towels.
Put enough oil in a large roasting pan to cover the bottom.
Place chicken in pan.
Place potatoes between the chicken pieces.
Lay in the onion slices.
Sprinkle tomatoes, parsley, basil, garlic, salt and pepper
over top of the chicken and potatoes.
Sprinkle with the grated cheese and the 3 tbsps. oil.
Bake at 375 degrees F. for 1 1/4 hours, or until chicken is done.
Makes 4 servings.
