4 slices bacon, chopped
8 ounces dry linguine
4 large eggs
1/2 cup grated Parmesan cheese
1/3 cup whipping cream
1/4 cup chopped parsley
1/4 cup chopped fresh basil leaves
3 cloves garlic, minced or pressed
1 1/2 cup diced cooked chicken
1 to 2 Tablespoons butter
In a 10 to 12 inch frying pan, cook bacon over medium heat
until golden, about 7 minutes.
In a 4 to 6 quart pan, cook linguine al dente to package
directions. Drain.
Meanwhile, with a slotted spoon, put bacon in a bowl.
Add eggs, cheese, cream, parsley, basil, garlic and chicken
and beat until well mixed.
Add enough butter to the drippings to make 1/4 cup, and
heat to melt butter.
Add hot linguine to frying pan, then add the egg mixture.
Stir over medium heat just until eggs begin to set.
Makes 4 servings.
