    List of Ingredients




    for the filling:

    2 lbs. fresh plums or 1 1/2 lbs. tart apples
    1 1/4 c. (sifted before measuring), flour
    1/4 c. sugar
    1 1/2 tsp. baking powder
    1/2 tsp. salt
    1/4 c. butter
    1 slightly beaten egg
    1/4 c. milk
    1 tsp. vanilla

    for the topping:

    1/4 c. sugar
    1 tsp. ground cinnamon
    1/4 c. melted butter
    1/3 c. strawberry preserves
    1 tbsp. water
    whipped cream or cinnamon ice cream sauce from below

    for the cinnamon ice cream sauce:

    1 quart vanilla ice cream
    1 tbsp. sugar
    2 tsp. ground cinnamon

    Preheat oven to 400. Grease a 13x9x2" baking pan or dish.

    for the filling:

    Wash the plums and drain.
    For easier slicing, cut each plum in half; then cut each half into 4 slices to measure 4 1/2 c.
    (If using apples, pare, quarter, core and slice thinly; to measure 3 c).
    In a medium bowl, sift the flour with the sugar, the baking powder and salt.
    Cut in the butter until it resembles coarse crumbs.
    In small bowl combine the egg, milk and vanilla, blending well.
    Add the egg mixture to the flour mixture, beating vigorously until smooth, about 1 minute.
    The batter will be quite stiff.
    Spread the batter evenly over the bottom of the baking pan.
    Arrange the plum slices over top of the batter, to cover completely, as with directions as follows.
    Place thin sides down, slightly overlapping, in five parallel rows.
    Place any extra slices between the rows.

    for the topping:

    Mix the sugar, cinnamon and melted butter together.
    Spoon over the fruit.
    Bake for 35 minutes or until the fruit is tender and the pastry is golden.
    Remove to a wire rack to cool slightly.
    (Meanwhile, if going to use the sauce, remove ice cream from freezer to soften.)
    In a small saucepan, over a medium heat, mix the preserves with the water, stirring until melted.
    Brush over the plums.

    for the sauce:

    Combine the ice cream, sugar and cinnamon in a medium bowl.
    Mix well until smooth.
    Pour into a chilled dish serving dish.
    Freeze if not using immediately.

    Cut between the rows of fruit into 10 rectangular pieces.
    Serve with whipped cream or the cinnamon sauce.
    Makes 10 servings.
