    Baked Ziti #1, plain**

    I've been quite happy with the taste and the ease of
    this recipe and have gotten raves about how good it was.

    Baked Ziti #1, plain**

    1 quart (32 ounces) or more homemade spaghetti sauce
    16 ounces Ricotta cheese
    1/2 cup grated Parmesan cheese
    3 cups shredded Mozzarella cheese
    2 beaten eggs
    1 Tablespoon, or to taste, dried garlic
    1 pound ziti pasta, cooked
    ...al dente or a bit less, drained

    Heat oven to 375 degrees F. Lightly grease 9 x 13 x 2 inch
    baking pan.
    Divide into 2, 8 x 8 x 2 inch pans and freeze one!)
    In a super large bowl, completely combine 2 cups of the sauce,
    the Ricotta and Parmesan cheeses, eggs, garlic and 1 cup of
    the
    Mozzarella cheese. Stir in the cooked ziti.
    Spread 1 cup or a little more sauce in the bottom of the pan.
    Spread the ziti mixture on top of sauce.
    Spread at least 1 more cup of sauce on top.
    Sprinkle with the rest of the Mozzarella.
    Bake for 25 minutes or until cheese is bubbly and slightly brown
    around the edges.

    Notes:
    This recipe freezes beautifully. After baking, allow ziti to cool down.
    Once cool, cover top of baking pan with plastic wrap. Completely
    cover the plastic wrap, tucking in edges if necessary, with heavy
    foil. Freeze pan. The frozen pan can go in the oven, but cooking
    time may increase to an hour or more. Cooking time is same as
    above if ziti is allowed to defrost.
    Also, freezing may cause the ziti to dry. You may wish to have
    some extra sauce on hand, if you use it after freezing.
