    1 9" graham cracker crust
    2 tbsp. unsalted butter
    3 tart apples, cut 1" cubes
    1/4 c. sifted powdered confectioners sugar
    1 1/2 tbsp. fresh lemon juice
    1 12oz. container caramel topping
    1 quart vanilla ice cream
    1/2 c. chopped, toasted nuts, optional

    Recipe



    Melt the butter in a large frying pan. (Not aluminum)
    Add the apples and saute over a medium heat, until just about tender, 5 - 6 minutes.
    Stir in the sugar and lemon juice, and cook for 1 more minute. Remove from the heat.
    Scrape the apples and the juice onto a large plate to cool.
    When almost cool, scrape into the crust, spreading out evenly.
    Slowly pour a little less than half of the caramel over top of the apples.
    Place in the freezer for 30 minutes to firm up the apples and caramel.
    Remove the ice cream from the freezer and place in the refrigerator to soften.
    Spoon the softened ice cream over top of the apples, pressing down and smoothing out.
    Pour as much of the remaining caramel over the ice cream as you wish.
    Sprinkle with the optional nuts.
    Place back into the freezer for at least an hour.
    Makes 8 - 10 servings.
