    Apple Pie #2, w/tapioca

    8 - 10 sliced tart apples, (more if needed)
    3 Tablespoons minute tapioca
    3/4 c. light brown sugar
    1 tsp. cinnamon
    1/2 tsp. salt
    1 tsp. vanilla extract
    4 tbsp. butter
    2 unbaked pie crusts

    Fit one crust into the 9 inch pie pan.
    Mix together apples, tapioca, sugar, cinnamon, salt and vanilla.
    Pace in the pie crust, mounding in center.
    Dot with butter.
    The crust should be filled completely with apples and slightly
    mounded in the center, add more sliced apples if necessary.
    Moisten 1st crust's edges with water.
    Top with the other crust. Press down to seal.
    Cut any large excess pieces of crust off.
    Roll remaining crust under and flute edges.
    Cut at least 3 slits in the top crust.
    Brush edges lightly with milk or cover with strips of foil to keep
    from browning too quickly.
    Bake at 450 for 10 minutes.
    Then bake at 350 for 10 minutes.
    Remove foil and continue to bake for 30 minutes or until the
    apples are tender.
