    Recipe Introduction


    The spicy custard filling with the praline crust compliments any holiday meal.
    You may substitute evaporated milk for the cream, if you prefer.

    List of Ingredients




    1 9" unbaked pie crust
    for the praline:
    1/3 c. pecans
    1/3 c. packed brown sugar
    2 tbsp. softened butter
    for the filling:
    2 eggs
    1 c. canned solid pumpkin
    2/3 c. packed brown sugar
    1 tbsp. flour
    1/4 tsp. ground cloves
    1 tsp. ground cinnamon
    1/2 tsp. salt
    1/2 tsp. ground ginger
    1 c. light cream

    Recipe



    Preheat oven to 450.
    for the praline:
    Use a small bowl to combine the pecans, brown sugar and butter together.
    Press the mixture firmly into bottom of the unbaked pie shell.
    Bake for 10 minutes.
    Reduce temperature to 325.
    for the filling:
    Use a large bowl to combine the eggs, pumpkin, brown sugar, flour, cloves,
    cinnamon, salt and ginger.
    Blend in the cream until smooth and creamy.
    Pour into partially baked shell.
    Bake for 40 - 45 minutes, or until the filling is set.
    Makes 8 servings.
