    donuts - Banana, fried

    5 cups sifted flour
    3 teaspoons baking powder
    1 teaspoon baking soda
    2 teaspoons salt
    1 teaspoon ground nutmeg
    1/4 cup solid shortening
    1 cup sugar
    1 1/2 teaspoons vanilla flavoring
    3 well beaten eggs
    3/4 cup mashed bananas, (approximately 2 good sized bananas)
    1/2 cup buttermilk
    oil for frying

    Measure and resift the flour 3 times with the baking
    powder, baking soda, salt, and nutmeg. Set aside.
    Cream the shortening and sugar together.
    Add the vanilla, and eggs, and beat until fluffy.
    Add the bananas and buttermilk, and stir until well mixed.
    Add the flour mixture, in 3 or 4 portions, stirring well after
    each addition. Refrigerate, as the dough needs to be
    chilled before rolling out.
    Remove from refrigerator and cut into 1/4's.
    Remove 1/4 and refrigerate remaining dough.
    Sprinkle surface to be used with flour.
    Knead dough lightly 4 or 5 times. Then roll to 3/8 inch
    thickness. Cut with floured 2 1/2 inch doughnut cutter.
    Heat oil to 375 degrees F. Then fry in oil until golden
    brown. Remove and drain on paper towels.
    Makes 3 dozen doughnuts.

    Note:
    The dough may be covered tightly and refrigerated for
    1 to 2 days, and cooked as needed.
