    The flavors in this are just amazing.
    Goes great with a simple salad.

    Italian Caprese Pie

    1 9-inch Pastry Pie Crust
    2 Cups Shredded Mozzarella Cheese, divided
    4 to 6 Tomatoes, cut in chunks and set in a colander to drain
    6 - 8 Leaves Fresh Basil, cut "chiffonade"
    2 Cloves Garlic, chopped fine
    Salt & Pepper, to taste
    1/2 Cup Shredded Parmesan Cheese
    3/4 Cup Mayonnaise

    Bake pie crust for 10 minutes in a 400 degree oven. When crust comes
    out of the oven, sprinkle 1/2 cup mozzarella on it and let melt.

    In colander, toss tomatoes with basil and garlic; transfer to pie crust.
    Sprinkle with salt and pepper to taste.

    Combine remaining Mozzarella with Parmesan and mayonnaise; spread over
    tomato mixture, working it out the edges. Bake at 375 degrees for 40 to
    50 minutes.
