    Caramelized Onion Pizza

    List of Ingredients

    1 teaspoon Olive oil
    2 cups thinly sliced Vidalia or other sweet onion
    1, 12 ounce jar well drained roasted red peppers, cut into thin strips
    1/4 cup sliced black olives
    1, 14 1/2 ounce can chopped Italian style tomatoes, drained
    1, 10 ounce thin pizza crust, like Boboli
    1/2 cup shredded low fat sharp Cheddar cheese, (2 ounces)

    Recipe

    Heat oven to 450F degrees. Coat a large skillet with cooking spray.
    Add the oil and onion. Saute for 12 minutes or until browned.
    Stir in peppers, olives and tomatoes.
    Place crust on a baking sheet.
    Spread the mixture over crust, leaving a border on the edge.
    Sprinkle with the cheese and bake for 12 minutes, or until cheese melts.
    Makes 4 servings.
