Rhubarb Cream Cheese Pie

1/4 c. cornstarch
1 c. sugar
1/2 tsp. cinnamon
1 pinch salt
1/2 c. cool water
2 c. sliced rhubarb, 1/2" or smaller pieces
1 unbaked 9" pie crust
1 8oz. pkg. cream cheese, softened
2 eggs
1/2 c. sugar
1 tsp. vanilla
frozen (thawed) or canned whipped cream, for garnish Recipe
Preheat oven to 425.
Mix cornstarch, sugar, cinnamon and salt in a medium saucepan. Stir in water until smooth.
Mix in rhubarb and cook over medium heat. Simmer until it thickens, stirring to make sure it does not stick.
Pour into crust and bake for 10 minutes.
Mix cream cheese, eggs, sugar, and vanilla together and beat until smooth.
Remove pie from oven.
Reduce oven temperature to 325.
Pour cream cheese mixture on top of baked rhubarb.
Bake for 35 minutes or until set. Can test by inserting knife in center...it should come out clean.
Let cool. Refrigerate several hours or overnight.
Serve with whipped cream if desired.
Makes 1 pie.
