    List of Ingredients




    for the crust:
    1 1/4 c. flour
    1/2 c. white granulated sugar
    1/2 c. butter, room temperature, (1 stick)

    for the filling:
    1 c. white granulated sugar
    1/4 tsp. salt
    2 tbsp. flour
    4 beaten eggs
    1 tsp. vanilla
    4 - 5 c. rhubarb

    Recipe



    Preheat oven to 350. Spray 9x13x2" pan with cooking spray.

    for the crust:
    Blend flour and sugar together, then cut in the butter with a fork or pastry blender. Press into the pan and bake for 10 - 12 minutes or until lightly browned.

    for the filling:
    Mix the sugar and flour together in a large bowl.
    Add the eggs, vanilla and rhubarb and blend well.
    Pour over partially baked crust and continue baking for 30 - 35 minutes.
    Serve warm or cooled.
    Store leftovers in the refrigerator.
