    Rhubarb Dumplings, (microwave)

    List of Ingredients

    1 cup packed brown sugar
    2 tablespoons cornstarch
    1 cup water
    3 cups finely chopped rhubarb
    3 tablespoons butter
    1 1/4 cup flour
    1/4 cup + 2 teaspoons white granulated sugar, separated
    1/2 teaspoon baking powder
    1/3 cup milk
    1/4 cup butter
    1/2 teaspoon ground cinnamon

    Recipe

    Combine brown sugar and cornstarch in a 2quart, microwave safe dish.
    Stir in the water until smooth.
    Add rhubarb and butter.
    Cover and microwave on high for 5 minutes.
    Uncover, stir, and for microwave 3 minutes until the rhubarb is tender and the sauce is thickened.
    Meanwhile combine flour, the 1/4 c. white sugar, baking powder, milk and butter together.
    Drop 8 mounds of batter on top of the rhubarb around the edges of the dish.
    Cover and microwave on high for 2 minutes.
    (do not lift cover)
    Rotate the dish a 1/4 turn.
    Microwave for 3 more minutes, or until a toothpick comes out clean from the dumpling.
    Combine the 2 tsp. white sugar and cinnamon.
    Sprinkle over the dumplings.
    Serve warm with cream, whipped cream or ice cream.
    Makes 8 servings.
