    Rhubarb Pudding Pie

    This is fruity and refreshing. You can use sugar free gelatin and pudding and a reduced fat milk and crust if you want.

    List of Ingredients




    3 c. chopped rhubarb
    1 3oz. pkg. strawberry gelatin
    1 1/2 c. milk
    1 3oz. pkg. vanilla instant pudding mix
    1 graham cracker pie crust

    Recipe



    Place the rhubarb in a bowl and microwave for 6 -8 minutes on high or until the rhubarb is softened, stirring every 2 minutes.
    Stir in the gelatin until it is dissolved. Let cool completely.
    Combine the milk and the pudding mix in a bowl and beat slowly for 2 minutes.
    Fold the cooled rhubarb into the pudding.
    Pour into the crust. Cover and refrigerate until firm.
    Makes 8 servings.
