    Bacon + Tomato Chowder

    Bacon + Tomato Chowder

    1/2 pound diced bacon
    1 quart stewed tomatoes
    1 quart chicken broth, divided
    1/4 cup butter, (1/2 stick)
    1 small diced onion
    1/4 cup flour
    2 cups warm milk
    shredded lettuce for garnishing

    Fry bacon and drain well; set frying pan aside.
    Place bacon into a large pot.
    Add tomatoes and 3/4's of the chicken broth.
    Deglaze frying pan with remaining chicken broth,
    and then add to pot.
    In another pan, melt butter and saute onions until
    tender, but not brown.
    Add flour and stir well; then add to tomato mixture.
    Slowly stir warm milk into tomato mixture and heat well.
    Before serving, top each bowl with lettuce and croutons.
    Makes 8 to 10 servings.
