    Coddle Stew, (Dublin Stew)

    1 pound pork sausage link, cut into chunks
    1/2 pound chopped bacon
    1 chopped onion
    chicken or vegetable stock, or broth
    4 medium chopped carrots
    1, 15 ounce can tomato puree
    1 fresh tomato, cut into 8 wedges, then cut each in half
    1 tablespoon dried parsley
    1/2 teaspoon dried thyme
    1/2 teaspoon ground black pepper
    sea salt to taste
    4 cubed potatoes

    Saute sausage, bacon and onion in a large pot.
    Then add stock to cover and bring to a boil.
    Add the carrots, puree, tomato pieces, parsley, thyme, pepper and
    salt to the pot. Let simmer for about 15 minutes.
    Add more stock and the potatoes. Let simmer until the ingredients
    are tender and cooked to your liking. Add exta seasonings to taste.
