    Cream of Broccoli Soup

    Cream of Broccoli Soup

    1 bunch of broccoli, washed, trimmed and cut
    ...into1/2 inch thick pieces
    1/4 cup butter, (1/2 stick)
    2 medium chopped onions
    2 cups chopped celery
    1 chopped garlic clove
    1/2 cup flour
    4 cups milk
    4 cups chicken broth
    1/2 teaspoon ground marjoram
    1/2 teaspoon thyme
    salt and pepper to taste

    Steam broccoli in salted water to desired tenderness.
    Saute onions, celery and garlic in butter until brown.
    Gradually stir flour into butter mixture.
    Slowly whisk in milk, and then the broth.
    Stir in majoram and thyme.
    Stir over low heat until soup thickens and boils.
    Add broccoli, salt and pepper.
    Simmer until broccoli is heated through.
    Makes 10 servings.
