    Leftover - Turkey Pasta Fagioli

    List of Ingredients

    1 pound uncooked rigatoni type pasta
    1 clove garlic, minced
    2 tablespoons Olive oil
    2 bunches broccoli/rabe, cleaned and trimmed
    1 1/2 cup any cooked white turkey breast meat
    1 cannellini beans, drained and rinsed
    or use 2 white beans
    1/4 cup sundried tomatoes, drained, chopped
    1 chicken broth
    1/2 teaspoon salt
    1/2 tsp. pepper
    1/4 cup Parmesan cheese, grated

    Recipe

    Cook pasta al dente with package directions.
    Meanwhile, in a large nonstick skillet, over medium heat, saute garlic in oil until lightly browned.
    Add broccoli-rabe and toss to coat; cover and cook about 3 minutes, until just wilted.
    Stir in turkey, beans, tomatoes, broth, salt, and pepper. Simmer, uncovered 5 minutes.
    Drain pasta; toss with the bean mixture.
    Sprinkle with cheese.
    Serves 8.
