    12 - 14 pound thawed turkey
    salt and black pepper to taste
    2 tablespoons unsalted butter
    2 finely chopped medium onions
    1, 16 ounce can JELLIED cranberry sauce
    1/3 cup packed brown sugar

    Recipe



    Remove the giblets, neck and discard livers.
    Remove any visible fat from turkey and reserve for stock.
    Rinse turkey with cold running water.
    Drain well and blot dry with paper towels.
    Spinkle inside and outside with salt and pepper.
    Tie the drumsticks together.
    Twist wing tips behind back.
    Spray roasting rack with cooking spray and place in
    the roasting pan.
    Place the turkey, breast side up, on the roasting rack.
    Cover loosely with foil.
    Cook at 325 degrees F. for 2 1/2 hours, basting often with
    the pan juices.
    Use a large saucepan to melt the butter over a medium heat.
    Cook the onions with salt and pepper, for 15 minutes or
    until very soft, stirring occasionally.
    Stir in the cranberry sauce and sugar.
    Bring to a boil.
    Simmer for 10 minutes, stirring occasionally.
    Remove the foil and pour the cranberry glaze over the
    turkey.
    Continue to cook for 1/2 - 1 1/4 hours, or until the
    thermometer read 180 degrees F. in the thigh, and 170
    degrees F. in the breast.
    Remove from the oven and let set for 10 - 15 minutes before
    carving.
